The Art of Neapolitan ‘Pizzaiuolo’ which originates in Naples, is the capital of the Campania Region. It is a culinary practise which comprises four different phases which are related to the preparation of the dough and its baking in a wood-fired oven, involving a rotatory movement by the baker.

At that time, only the flatbread with toppings has been consumed for centuries in ancient civilisations from Egypt to Rome, but then, the southwestern Italian city of Naples is generally credited as the birthplace of the pizza we know today (dough layered with tomatoes and cheese). The story of pizza begins here as a story that has developed over the centuries becoming a result of global migration, economic development, and technological advancement.

Every year, the Association of Neapolitan Pizzaiuoli organizes courses focusing on the history, instruments and techniques of the art so that they can continue to ensure its viability. Technical know-how is also guaranteed in Naples by specific academies, and apprentices can learn the art in their family homes.

As an addition of this, Naples is widely credited as the birthplace of pizza in the late 1700s. Today, an estimated five billion pizzas (350 slices per second in the US alone) are consumed internationally each year, according to the reports by Google.
